How I Meal Prep Our Lunches

I don’t know about you guys, but with this busy life we have been blessed with, it can be really hard stay on top of eating healthy! For me, convenience is EVERYTHING, and sometimes that means fast food or those not so healthy snacks you have in your pantry. BUT…recently I have been trying to plan ahead more so that I have better options to grab on the go. Meal prepping these Mason Jar Salads makes is so much easier to have a fast and HEALTHY lunch!

One of the best parts about these is that there is no cooking at all if you don’t want to, just assembling! The chicken I use is the pre-cooked rotisserie chicken from the grocery store, ours even comes pre-shredded so it is literally no work! I have been doing two different varieties: chicken Caesar, and spinach with chicken, but you can get as creative as you want with these.

For the Caesar Salad you will need chicken, romaine lettuce, pine nuts, Parmesan cheese, croutons and your favorite Caesar dressing. Start by putting the shredded rotisserie chicken at the bottom of the jar and then layer in this order- Parmesan cheese, pine nuts and then romaine lettuce. When you are ready to eat just top with croutons and dressing! Tip: try poblano Caesar! It’s delicious!

                     
For the spinach salad, I use chicken, spinach, crumbled goat cheese, candied pecans and dried cranberries. Again, shredded rotisserie chicken at the bottom of the jar and then layer in this order- pecans, goat cheese and cranberries. When ready to eat, top with your favorite vinaigrette dressing!

When you’re done assembling, throw them in the fridge and you have quick and easy lunches (or dinner) all week long. If you work outside your home and want to pack these for lunch, it helps to have small containers of dressing & croutons portioned out so that you can just grab everything and go. Don’t forget, you’ll need a bowl to pour your salad into!
